Green Matcha Pancakes Recipe

Pancakes are one of our favorite brunch dishes! It is hard to stay on a healthy diet and eat pancakes at the same time! That is why we came up with a healthy substitute - Green Matchami Pancakes! Wow and impress your kids, family, and friends that come over on the weekends by making this green stack of yumminess!

1. Combine all ingredients in a mixing bowl
2. Coat a non-stick pan with cooking spray and heat over medium to high heat
3. When pan is hot enough, slowly ladle about 1 of a cup per pancake and cook until tops are covered with bubbles and edges look cooked
4. Very delicately flip the pancakes and cook until second side is golden then transfer to low temp oven to keep them warm while you cook the remaining pancakes.
5. Garnish with dollop of plain yogurt, chopped pistachios, blueberries and drizzle of honey
6. Enjoy these guilty-free, green Matchami pancakes!
