Carrot Ginger Salad

Easy salad that is perfect for lunch! All your ingredients are placed in a jar so it is easy to take on the go! Its also detox friendly!

INGREDIENTS

Salad Dressing
  2 carrots peeled
  1/2 a small shallot
  1/4 cup peeled ginger
  1 tbsp white miso paste
  2 tbsp rice vinegar
  1 tbsp honey
  1/2 tbsp toasted sesame oil
  4 tbsp grapeseed oil
  2 tbsp water
  1/4 tsp salt
  1/4 tsp black pepper

Salad
  2 cups arugula
  1 carrot
  1/4 cucumber
  1/4 bell pepper
  handful of sugar snap peas
  1 tbsp chopped almonds
  wantons

DIRECTIONS

Salad Dressing:

1) Place all Salad dressing ingredients in the blender
2) Blend until smooth

Salad:
1) Chop all Salad ingredients
2) In a  Mason Jar add 4 tablespoons of dressing
3) Add Carrots, pepper, cucumbers and sugar snap peas
4) Add the lettuce next followed by the sliced almonds and wantons
5) Place the lid on the jar and shake
