Pumpkin Streusel Protein Muffins

Muffin Ingredients:

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix all ingredients for streusel until crumbly and set aside. You may need to adjust your oil and flour depending on climate but make sure it crumbles.
  3. Add the dry ingredients in a bowl and mix well.
  4. In a separate add the remaining wet ingredients well
  5. Create a well in the dry ingredients to pour the wet mixture into and fold together with a spatula being careful to not over mix. Over mixing will cause tough muffins.
  6. Fill muffin tins all the way full and top with streusel
  7. Bake for 25-30 minutes. Mine tend to be ready closer to 25 minutes.
  8. Once done baking, allow the muffins to cool before eating so that the center fully sets. Enjoy!
