Healthy Cauliflower Mash

Directions

Bring a large pot of salted water to a boil, add the cauliflower and garlic and cook for about 10 minutes or until the cauliflower is tender.  Drain, return it back to the hot pan and let it stand for 2 to 3 minutes with the lid on the pan.

Put the cauliflower and garlic in a food processor, add the olive oil, salt and pepper and mix until smooth.  (You can also use a potato masher or hand blender)

Add salt & pepper to taste!  Garnish with chopped fresh thyme, salt, pepper and a little olive oil!
