Lemon Blueberry Bites

  2 scoops protein
  1/3 cup unsweetened shredded coconut
  1/3 cup lemon juice
  1 tsp lemon zest
  2 Tbs coconut oil
  1 tsp. lemon extract
  1/4 dried blueberries


1. Place all dry ingredients in a bowl

2. Add in the wet ingredients
3. Mix the ingredients together until smooth
4. Roll into about 12 1 inch balls
5. Place in the fridge for up to a week
6. Enjoy 2 energy bites for up to one week
